MARINARA SAUCE / SPAGHETTI

Marinara Sauce / Spaghetti

This sauce is great for any Italian dish. You can make it ahead and freeze for later use.

INGREDIENTS

  • 28 ounces crushed tomatoes
  • 15 ounces tomato sauce
  • 8 ounces tomato paste
  • 1 cup carrots -- grated
  • 1/4 cup Olive oil
  • 3 slices bacon -- diced
  • 1 cup onion -- minced
  • 1 teaspoon onion powder
  • 4 cloves garlic -- minced
  • 1 teaspoon garlic powder
  • 2 tablespoons honey
  • 2 teaspoons Salt
  • 1/2 teaspoon black pepper
  • 1/2 cup basil leaves -- chopped
  • 1/2 teaspoon fennel seed -- crushed
  • 1/2 teaspoon oregano
  • 2 large bay leaves
  • 2 teaspoons sugar
  • 2 cups beef broth
  • 1 cup red wine
  • 1 pound mushrooms -- sliced

DIRECTIONS

Sauté bacon in a large saucepan until the fat is rendered. Sauté the onion for several minutes but do not brown. Stir in the garlic and cook until softened. Stir in all other ingredients and bring to a boil and then reduce heat to a simmer and cook for about an hour but longer is better. If too thin, cook a little longer, if too thick add a little water.


For a meat sauce, brown 2 pounds of ground beef, Italian sausage, meatballs, or any type meat desired.
