  • 6 medium cucumbers, thinly sliced
  • 1 medium onion, sliced
  • 1 cup vinegar
  • 1/4 to 1/3 cup sugar
  • 1/4 cup olive or vegetable oil
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp dried marjoram
  • 1/2 tsp lemon-pepper seasoning
  • 1/2 tsp ground mustard


  • In a bowl, combine the cucumbers and onion. In a jar with a tight-fitting lid (I use a tupperware bowl), combine remaining ingredients; shake well. Pour over cucumber mixture. Cover and refrigerate for at least 4 hours. Serve with a slotted spoon. 12 servings.
