Marinated Veggies

Serves 12 | Prep Time 20 | Cook Time 10

Ingredients

1 - 16oz bag baby carrots, sliced
1 onion, sliced
1 bell pepper, sliced
8oz fresh mushrooms, halfed
1 - 14oz can artichokes, drained and halfed
1 cup celery, sliced
1 small jar chopped pimento, drained
1 can zesty tomato soup
1/2 cup oil
3/4 cup sugar
1/2 cup vinegar
1 Tbsp worcestershire sauce
1 tsp tiger sauce
2 Tbsp minced garlic
1 tsp dried basil
1 tsp oregano


Put first 7 ingredients in large bowl with lid and set aside.


Mix remaining ingredients in saucepan and bring to a boil and then simmer for 10 minutes.


Pour over veggies and stir.


Place in frig overnight.


Drain and serve.
