MARY'S LIME PICKLES

Ingredients

  • 7 lb. Pickles Sliced
  • 2 cups Lime (Pickling Kind)
  • 2 gallon Water
  • 2 quarts Vinegar
  • 4 1/2 lbs. Sugar
  • 1 teaspoon Celery Seed
  • 1 teaspoon Whole Cloves
  • 1 teaspoon Pickling Spices
  • 1 tablespoon Canning Salt

Directions

  • Add the lime into the water and mix well
  • Add pickles and let stand 24 hours
  • Drain and wash several times in cold water
  • Let stand in cold water for 3 hours
  • Mix Vinegar, Sugar, Celery Seed, Cloves, Pickling Spice & Canning Salt
  • Mix all together until the sugar is dissolved
  • Pour over pickles and let stand overnight
  • Boil together Pickles and Spices & simmer for 30 minutes
  • Pour into Jars
  • Put in Hot Water Bath for 10 minutes

Notes

Mom made these a lot - I always looked forward to getting a couple of jars for myself.
