Mary's Ricotta Cheese Chocolate Chip Cookies
Why I Love This Recipe
This recipe makes a soft, tender chocolate chip cookie. You can't stop at one and this recipe makes a big batch. (Depending on the size you can get 7 dozen and maybe more cookies!)
Ingredients You'll Need
4 c. flour
1 lb. Ricotta cheese
1/2 c. butter, (1 stick, softened)
1 3/4 c. sugar
2 tsp. vanilla
1 1/2 tsp. baking soda
1 bag chocolate chips (12 ounce, use mini chips if you are making small cookies)
Mix flour and baking soda.
Mix and cream sugar and butter.
Beat 3 eggs and add to sugar mixture.
Add Ricotta cheese and then flour mixture.
Add vanilla, then chips.
Drop by teaspoons for smaller cookies and bake for 8 - 10 minutes.
Or, use a scant tablespoon and bake at 400 degrees 10 to 12 minutes.
Cookies should be lightly browned and leave a little imprint when touched.
