Mashed Cauliflower and Potatoes with Coconut Milk

Ingredients

1 cauliflower cut into florets
5 medium potatoes peeled and diced
water enough to cover cauliflower and potatoes
14 oz. coconut milk
6 garlic cloves minced
6 TBSP olive oil
small bunch of chives chopped
salt and pepper to taste


In pot boil cauliflower and potatoes with water for 5 minutes then simmer for 15 minutes or until potatoes and cauliflower are soft.


Drain water and add cauliflower, potatoes, 1/2 coconut milk to pot and mash together while cooking in low temperature.


In pan saute garlic with oil and add to pot.


Add chives, 1/2 coconut milk, salt and pepper and mash everything until creamy.
