- 6 medium potatoes
- 6 eggs
- 1 med white onion diced
- 1-3 large sweet pickles
- 1/2 c. diced celery
- 1 c mayonnaise
- 1 tbsp prepared mustard
- 1/2 tsp salt
- 1/3 c liquid from sweet pickles
- salt and pepper to taste
- Peel and boil potatoes. Hard boil eggs. Dice onion, and pickles. Roughly chop the hard boiled eggs. Reserve 1 egg for garnish.
- Mash potatoes while hot and add diced eggs, onions, celery, salt and pepper. Mix mayonnaise, mustard and pickle juice in separate bowl (be sure this mixture is quite thin). Pour over hot potato mixture and stir. Garnish with cut up egg and paprika. Chill.
