- 2 C self-rising flour
- 1 C milk
- 2 T sugar
- 4 heaping T mayonnaise
- Oven 350 degrees; lightly grease a 12-cup muffin tin with butter.
- In a large bowl, combine flour and milk, blending with a rubber spatula. Add the sugar and mayonnaise, and stir until just combined. Spoon batter into prepared muffin tin. Bake for 12 to 15 minutes, or until golden brown.
NotesI've been using this recipe for about 15 years. It originally came from a church fund-raiser cookbook that I picked up on a trip through Tennessee, but I can't remember the name of the book.
