MEATLESS CASAROLLE

Ingredients

  • 3 cups hot cooked rice
  • 1 1/2 cups grated sharp cheddar cheese
  • 6 eggs
  • 1 tsp salt
  • 1/2 cup milk
  • 1/2 cup chopped onion
  • 2 pkg frozen broccoli
  • 1/4 tsp pepper
  • 1 can mushrooms

Directions

  • Combine rice with 3/4 cup cheese and 2 eggs
  • Press into 12 inch pan or 2 nine inch pie pans
  • Mix onion and broccoli, cook per pkg directions, drain well
  • Beat remaining eggs, stir in milk, pepper, mushrooms and salt
  • Add broccoli and spoon into crust
  • Bake at 375 for 20 minutes
  • Sprinkle remaining cheese on top and bake 10 minutes more
  • Let stand a few minutes and slice.
