MEATLESS CASAROLLE
INGREDIENTS

- Preparation Time: 20
- 3 cups hot cooked rice
- 1 1/2 cups grated sharp cheddar cheese
- 6 eggs
- 1 tsp salt
- 1/2 cup milk
- 1/2 cup chopped onion
- 2 pkg frozen broccoli
- 1/4 tsp pepper
- 1 can mushrooms
DIRECTIONS
Combine rice with 3/4 cup cheese and 2 eggs
Press into 12 inch pan or 2 nine inch pie pans
Mix onion and broccoli, cook per pkg directions, drain well
Beat remaining eggs, stir in milk, pepper, mushrooms and salt
Add broccoli and spoon into crust
Bake at 375 for 20 minutes
Sprinkle remaining cheese on top and bake 10 minutes more
Let stand a few minutes and slice.
