I found the recipe in a magazine. It caught my attention, both because of ingredients and because it was all there, didn't have to think what side dish to cook with the meat.

  • 4 beef medallions
  • 500 g fava beans
  • 250 g peas
  • 1 small onion
  • 1 bell pepper
  • vegetable stock
  • parsely
  • olive oil
  • salt

  • If you are using fresh fava beans and peas, remove them from pods. You can also use precooked or frozen ones.
  • Cut finely onion and cook it in a skillet with 3 tblsp of oil, add fava beans and saute for a few minutes, then add half a cup of veg. stock. Let them cook for 15 minutes.
  • Add peas, parsely, pepper cut into stripes, add some more stock, and continue cooking until all vegetables are cooked. Add salt towards the end, when beans are soft.
  • In a skillet warm some oil and cook medallions for about 2-3 minutes on each side. Then put them in the other skillet with vegetables for a few minutes before serving.
