4 beef medallions
500 g fava beans
250 g peas
1 small onion
1 bell pepper
If you are using fresh fava beans and peas, remove them from pods. You can also use precooked or frozen ones.
Cut finely onion and cook it in a skillet with 3 tblsp of oil, add fava beans and saute for a few minutes, then add half a cup of veg. stock. Let them cook for 15 minutes.
Add peas, parsely, pepper cut into stripes, add some more stock, and continue cooking until all vegetables are cooked. Add salt towards the end, when beans are soft.
In a skillet warm some oil and cook medallions for about 2-3 minutes on each side. Then put them in the other skillet with vegetables for a few minutes before serving.

I found the recipe in a magazine. It caught my attention, both because of ingredients and because it was all there, didn't have to think what side dish to cook with the meat.
