Mediterranean Chicken and Wild Rice Salad
8 ounces of wild rice (cooked according to directions)
1 can of hearts of palm, sliced into half inch sections
1 2 1/2 pound roasted chicken, boned and shredded (I buy one from the food store)
1 7 oz. jar of roasted peppers drained and chopped
2 bunches of arugula, chopped
1/2 cup chopped green onions
1/2 cup toasted walnuts (you can use pine nuts or pecans as well)
3 T soy sauce
3 T rice vinegar
3 T dark sesame oil
1 medium head romaine lettuce
Cook rice according to directions.
Transfer cooked rice to a large bowl nd combine with chicken, arugula, roasted peppers, hearts of palm, green onions and lettuce.
Whisk soy sauce, rice vinegar, and sesame oil in a small bowl.
Pour over salad and mix well.
Season with salt and pepper.

This is a great dish to bring to a BBQ. It can be made the night before and just gets better over time.
