5 lbs. rind
1/2 bottle of Lilly's Lime or 2 Tbs. slack lime
1/2 gallon of water (soak overnight)
4 Tbs of sugar
1 qt. of vinegar
2 Tbs. pickle seasoning
1 Tbs. of salt
Wash the rinds after soaking and put them in clean water.
Let them come to a boil.
Boil 20 minutes then drain off all the water.
Put again into clean water and let them come to a boil.
Drain again and add in mixed vinegar and seasonings,
Let it boil once more and then cook for an hour.
