Melt-in-Your-Mouth Blueberry Cake
1 1/2 cups sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs -- separated
4 Tablespoons margarine
4 Tablespoons shortening
1 cup sugar
1/3 cup milk
1 teaspoon lemon juice
1 1/2 cups blueberries -- floured
Sift flour, baking powder and salt together 3 times.
Beat egg whites stiff and set aside.
Cream shortening with sugar and add yolks, beating well.
Add dry ingredients alternately with milk.
Fold in whites and lemon juice.
Gently fold in berries.
Pour into greased 9" or tube pan; sprinkle with sugar.
Bake 350° 30 minutes.
Sprinkle with sugar, again, immediately upon removing from oven.
