MEXICAN BAKED POTATOES

Ingredients

  • 1 lb. ground beef
  • 1 can cheddar cheese soup
  • 1 c chunky salsa
  • 4 hot baked potatoes, split
  • Sour cream
  • Sliced pitted black olives

Directions

  • Cook beef in skillet til browned.
  • Pour off fat.
  • Add soup, salsa, heat through.
  • Serve over potatoes.
  • Top w/sour cream, olives.
  • To bake potatoes:
  • Pierce potatoes w/fork.
  • Bake at 400°F. 1 hr.
  • OR: microwave on HIGH 10 1/2 to 12 1/2 min. til fork-tender
