Mexican Casserole

INGREDIENTS

  • 2 lbs. ground beef
  • 1 can enchilada sauce
  • 1 can mushroom soup
  • 1 small can chopped green chilies
  • 1 med. onion, chopped
  • 8 oz. jar taco sauce
  • 1 dozen small corn tortillas
  • 3/4 lb. grated cheddar cheese
  • Parmesan Cheese

DIRECTIONS

Brown beef and onion; add enchilada sauce and taco sauce. Mix mushroom soup(undiluted) and chilies together in separate pan and heat. Line casserole dish with tortillas. Top with layer of meat mixture; add soup mixture and grated cheese. Repeat process. Sprinkle with parmesan cheese. Bake 45 minutes at 350 degrees or bubbly. Serves 6.
