Mexican Cheese Squares
1/4 cup flour
1/2 tsp baking powder
1/8 tsp salt
4 tbls melted margarine/butter
4 oz chopped green chilies
1 cup small curd cottage cheese
2 cups shredded Monterey Jack cheese
Beat eggs in a large bowl.
Stir in flour, baking powder and salt.
Stir in chilies and cheeses till blended.
Pour 2 tbl melted margarine over bottom and sides of 9x9 baking dish or pan.
Stir in remaining 2 tbl melted margarine into cheese mixture.
Pour cheese mixture into pan.
Bake 15 minutes in 400 degree oven.
Reduce heat to 350 degrees and bake another 30-35 minutes until lightly browned.
Cool for 10 minutes and cut into squares.
