1 cup cornmeal
1 cup flour
4 tsp baking powder
3 TBLS sugar
1/2 tsp salt
1 cup milk
4 TBLS oil
3/4 cup grated colby/jack cheese
1 small can green chili or fresh jalapeno
3/4 cup corn, drained
Preheat oven to 425 degrees. Preheat 10" cast-iron skillet while mixing cornbread.
Beat eggs and mix with milk and oil.
Combine milk/eggs with remaining ingredients.
Add 2 TBLS butter to preheated skillet. After melted, add cornbread mixture.
Bake for 20-25 mins or until knife comes out clean.
