MEXICAN EGG DISH

 

  • Cooking Time: 50-60
  • Servings: 6-8
  • Preparation Time: 20

Ingredients

  • 1 dozen eggs
  • 1 pint small curd cottage cheese
  • 1 lb grated jack cheese
  • 1 7oz can green chili, diced
  • 1 stick of butter, melted
  • 1 cup milk
  • 1 cup bisquick mix
  • Sour cream
  • Salsa

Directions

  • Mix first 6 ingredients together
  • Add 1 cup of bisquick to the mix
  • Stir well
  • Pour into a butter 9 x 13 pan
  • Bake at 350 for 50-60 minutes
  • Until it is golden brown crust
  • Serve topped with Sour cream and salsa
  • It reheats in the microwave well

Notes

This dish is from Auntie Carole. At almost all family functions, she brings this dish. Now I bring the dish. We serve it with Melon, Orange Marmalade mixed with butter spread on warm tortillas. This dish can be made low-fat by using fake eggs, butter buds for the butter, low fat cheeses, and low fat Bisquick.. I also have a recipe for making Bisquick at home.
