- 1 box Mexican Rice prepared
- 1 can Rotel with lime and cilantro, drained
- 2 pickled jalepeno, seeded and chopped fine
- 1 cup cooked cubed chicken
- 2 cups shredded mexican cheese
- 12 large eggroll wrappers
Mix all together except wrappers and fill each wrapper with 1 1/2 tbsp chicken mixture, the moisten along two sides and fold over to seal. Fry in deep fryer til brown.
