MEXICAN EGGROLL

Ingredients

  • 1 box Mexican Rice prepared
  • 1 can Rotel with lime and cilantro, drained
  • 2 pickled jalepeno, seeded and chopped fine
  • 1 cup cooked cubed chicken
  • 2 cups shredded mexican cheese
  • 12 large eggroll wrappers

Directions

  • Mix all together except wrappers and fill each wrapper with 1 1/2 tbsp chicken mixture, the moisten along two sides and fold over to seal. Fry in deep fryer til brown.
