Why I Love This Recipe
Jack loves Italian food (of course), but not so much Mexican food. HOWEVER - insert mexican lasagna - and we have a winner! A fairly simple, one dish dinner that pleases all and is easily adaptable. Make ahead or make in the evening. These are the best kind of recipes.
Ingredients You'll Need
1 pound/package ground turkey (I prefer 93% fat free)
1 package of taco seasoning (reduced sodium)
1 can of dice tomatoes with juice
1 can of corn
1 can of black beans
1 can of olives
1 package of corn tortillas (you need at least 10 or so)
1 cup of salsa (I like Tostitos Restaurant style Medium)
1 package of shredded cheese (I like to use the reduced fat Mexican cheese blend mix)
Great to serve with sour cream, guacomole, remaining salsa.
Heat oven to 350 degrees (if making now).
Brown the ground turkey and drain most of the fat.
Mix in the taco seasoning & can of tomatoes (including juice from can).
Spray a 9"x13" pan with cooking spray and layer the bottom with tortillas.
Pour the ground turkey mixture on top of the tortillas.
Open and drain the olives, corn, and black beans. Add these by spreading on top of the turkey mixture with a fork. I didn't measure exactly how much I used, about 1/2 to 2/3 of each can contents (except the olives, I use all of those!).
Cover the top with tortillas.
Spread salsa over the tortillas and sprinkle the cheese to cover the entire top.
Refrigerate if saving for later in the day.
Bake for 28-35 minutes until cheese is melted/bubbly.
