MEXICAN RICE

Ingredients

  • 1/2 cup tomato sauce
  • 2 cups water
  • 1/4 tsp ground cumin
  • 1/2 tsp onion salt
  • 1 cup long grain rice
  • 1 tbsp margarine

Directions

  • Bring tomato sauce, water, cumin and onion salt to a boil.
  • Add rice and margarine. Stir. Cover saucepan tightly.
  • Reduce heat to a simmer and cook for 20 minutes. Remove from heat. Let stand 5 minutes, fluff with fork and serve.

Notes

This really doesn't sound like much, but it's wonderful with Tacos, Enchiladas or any kind of Mexican dish. I also like it with just plain fried chicken! :)
