MEXICAN WEDDING CAKES

 

  • Cooking Time: 12-15 minutes
  • Servings: appx 3 dozen
  • Preparation Time: 1 hour

Ingredients

  • 2/3 C nuts,pecan,walnuts,or hazelnuts,finely chopped
  • 1C butter,or margirine,softened
  • 1/4 C confectioners sugar
  • 1t. pure vanilla extract
  • 2C.all purpose flour
  • 1/2 t salt
  • Topping:
  • 1C.confectioners sugar

Directions

  • Pre heat oven to 350.degrees
  • line 2 baking sheets with parchment paper
  • place nuts on sheets,and toast appx 8 minutes until brown,cool nuts
  • place nuts and 2 T flour in food processor,grind until finely chopped,not paste
  • Cream butter and 1/4 C sugar together
  • beat in vanilla,add remaining flour and salt
  • beat until combined
  • stir in toasted nut mixture
  • cover and refrigerate for 1 hour
  • Form dough into 1 inch balls
  • place balls on baking sheets,ungreased 2" apart
  • bake 12-15 minutes intil edges are browning
  • place on wire rack until cool
  • line pan with waxed paper,add 1/4 c powdered sugar and roll cakes in sugar.add more sugar as needed.until all are coated well.makes appx 3 dozen cakes.
