Why I Love This Recipe

This salsa dip/spread is easy and always popular. You can serve it with crudité and or tortilla chips, crackers....

since this recipe is basically 1:1:1 it is so easy to double, if you need to.

Mexican Dip


Ingredients You'll Need

1 (8 oz.) cream cheese, softened
1 cup salsa (I use mild and chunky)
1 cup shredded cheddar cheese (can also do cheddar/jack, or whatever cheddar mix you prefer).


Directions

Place cream cheese in a microwave-safe bowl and soften in the microwave. Stir in the salsa until well-blended. Stir in cheese. Chill in fridge. The flavors get better and meld together as it chills, so this can easily be made the day before.


Serve with tortilla chips, or crackers or whatever you like. Because of the cream cheese, it sets up more like a spread, so you would need hardier tortilla chips that wouldn't break easily (we like round ones). But we also often serve it with a little cheese spreader knife with crackers.
