Mexican chicken salad

Serves 4 | Prep Time 20 | Cook Time 20

Ingredients

4 chicken tenders
2 Tablespoons oil
2 Tablespoons soy sauce
1 Head of lettuce, cut into 1 inches pieces
2 corn tortillas, sliced thin
1 Diced tomato
1 Cup grated cheese
1 Cup vinaigrette
1 Cup salsa


Spray tortilla strips with nonstick spray and lay out individually on a cookie sheet. Bake at 350 degrees F. for 10 minutes. In the meantime, diced chicken and cooking in hot oil in a skillet. Just before done, 10 minutes, add soy sauce. Divide lettuce between 4 plates. Place 1/4 of tomatoes, chicken, cheese onto each plate. Pour vinaigrette and salsa over salad and add baked chips.
