MEXICAN HAMBURGER

Ingredients

  • 2 tomatoes
  • 1 small onion
  • 1 clove garlic
  • 2 Tbs. chopped fresh coriander, optional
  • 1 lemon
  • 4 large rools
  • 1 1/2 lbs. ground beef
  • 2 tsp. oil
  • Salt and Pepper
  • 1 avocado
  • 1/4 cup sour cream

Directions

  • Core, seed and chop the tomatoes. Chop the onion and mince the garlic. Combine the tomatoes, onion, garlic and coriander. Squeeze 1 tsp juice from the lemon and add. Toast the rolls. Shape the beef into 4 hamburgers. Heat the oil in a large frying pan. Cook the hamburgers over medium-high heat for 4 minutes on each side for rare burgers. Season to taste with salt and pepper. Slice the avocado. Put the hamburgers in the rolls and top each patty with tomato salsa, avocado and a spoonful of sour cream.
