Mexican open faced turkey joe
1 pd ground turkey
1 14 1/2 ounce can of stewed tomatoes
1 8oz jar black bean corn salsa
1 bag of tortilla chips
1 Tbsp sour cream
Sliced black olives
In a large skillet, spray with pam. Brown the turkey breast over medium heat.
Add the stewed tomatoes, salsa and cook for about 10 additional minutes, stir often.
On each of four plates place chips and cover with meat mixture, cover with sour cream and black olives.
