Pineapple Upside Down Cake Michelle Losey's Style

Why I Love This Recipe

I remember my grandmother Elaine Mazur Nanna making this on a holiday get together. She used Pineapple slices w/cherries in the center of each ring. I asked her what was in it and took it from there to make my variations. :)


Ingredients You'll Need

13 x 9 inch pan
Melted butter
Light brown sugar
About 2 cans crushed pineapple in heavy syrup Strain juice into 2 cup measuring cup add water to equal 2 cups
2 cake mixes (either 2 pineapple or 2 yellow or 1 pineapple and 1 yellow or *opt 2 lemon cake mixes)
(*opt: Replace Pineapple w/ any of these other fruits or use 1 can of crushed pineapple w/ any one of these fruits fresh or frozen: Blueberries, Blackberries, Raspberries, Mandarin Oranges, Sweet cherries, Peaches- peeled diced or sliced, Apples- peeled diced or thin sliced, Pears- peeled diced or thin sliced, Bananas sliced, Coconut, Cranberries, Dewberries, Mulberries, Strawberries, Kiwi ect
*Opt: Add 1 cup any sweetened bottled juice that goes w/ fruit you're using exp: 1 cup Apple juice and 1 cup water)


Directions

Preheat oven 350°F (325°F for dark or nonstick pan)


Pour melted butter into pan use enough to get about a 1/4 in on bottom of pan


Sprinkle brown sugar over butter layer


Sprinkle Pineapple evenly over brown sugar layer


Make cake mixes as directed on box using pineapple water mix in place of water in directions and pour over pineapple layer


Bake at 350°F (325°F for dark or nonstick pan) until knife or toothpick comes out clean


When done use a butter knife around edges to loosen them from pan if needed and cover baking pan w/ serving platter that's bigger than the cake (I've used another 13 x 9 pan in a pinch) Flip pan and plate over so baking pan is upside dwn on serving plate let sit there for a few mins tapping bottom to loosen topping from the pan. When it starts dropping onto plate lift pan very slowly to get all the topping off the pan w/out tearing up the cake! (if a lil of the topping sticks in pan scoop out w/ a spoon and put on empty spot on cake so no one will know :) )
