Michelle Losey's Cheese Filled Meatloaf

Why I Love This Recipe

Meatloaf is as different as the person making it. This is my version.

Ingredients You'll Need

5 LBs Hamburger
4 eggs
3-5 yellow cooking onions chopped
1 green bell pepper diced
1 red bell pepper diced
1 tsp parsley flakes
1 tsp cilantro flakes
1 tsp cumin/ tumeric
salt pepper and garlic powder
Regular Seasoned bread crumbs
*Opt: Use stovetop stuffing chicken flavor crushed in the food processor instead of the bread crumbs
*NOTE: Sneaky cooks could slide in a TBS or 2 of pureed spinach, turnip greens or other green w/out being noticed ;) LOL

1 Cup whole milk small curd cottage cheese
1 Cup ricotta cheese
1/4 Cup grated parmasean cheese
1/2 Cup shredded or grated provolone cheese
1/4 Cup shredded or grated longhorn colby cheese
*Opt: Goat cheese too
*Opt: Can add sauted in butter mushrooms to cheese mix

1/2 Cup ketchup
1 tsp brown sugar
Opt topping- sour cream instead of ketchup

*Optional topping:
Make a Mash of Potatoes, carrots, brocc., heck you can even throw in a turnip if you like :) Use lotsa butter for mash and a touch of salt
If using this topping which is my fav I use sour cream on my slice!


Preheat oven to 350F

In 1 large mixing bowl add all meat mix ingredients and mix well

I 2nd large mixing bowl add all cheese ingredients and mix well

Now the hard part or fun part how ever you look at it lol

Pick 1 arm and wash very good remove all jewelry

Make a fist

Pack meat mix all around your fist wrist and part of your forearm

Keep meat mix equal on all sides including bottom

Remove arm and fill hole w/ cheese mix don't get cheese mix too close to outside or it might leak out and burn

Seal outside edge so it don't leak out

Put about an inch of water in the bottom and make sure theres always water on the bottom so it don't burn

Cover and bake 'till cooked through

Remove cover and spread topping over top

Return to oven to brown can turn heat up to 400- 425F to brown it
