Michelle Losey Spaghetti Squash Salad

Serves | Prep Time | Cook Time

Ingredients

Italian or vinaigrette dressing
1-2 Spaghetti squash depending on size
1/2 onion diced
1/2 green or yellow sweet bell pepper diced
1 cucumber peeled and cut in thick slices then 1/4 the slices
About 5 white mushrooms chopped
About 5 Roma paste tomato (or other paste tom.) chopped
Cheddar cheese cubed or shredded
Croutons
*Opt: 1 clove garlic minced or a couple shakes garlic powder
*Opt: 1 stalk celery diced
*Opt: Baby spinach leaves stems removed
*Opt: Mild peppers
*Opt: Chickpeas
*Opt: 1/2 - 1 can of lima or butter beans
*Opt: Meat of your choice cooked and chopped into bite size chunks (chicken, ham, pork chops/ pork steaks/ or roast, steak, turkey, Atlantic salad shrimp, Those round jerky type sticks, pepperoni, kielbasa, sausage links, leftover hamburgers ect )
*Opt: Add some Activia yogurt (adds health benefits but not needed for salad)


Cook Spaghetti squash in microwave or oven use a fork to scrape it out keep returning to microwave or oven 'till you get all cooked squash out


Add onion, bell pepper, cucumber, mushrooms, and tomatoes mix well (add any other vegetable here)


Add dressing mix well


Cover w/ plastic wrap and cool in fridge


When cooled dwn add cheese


If adding meat add it here mix well re-taste to make sure you have enough dressing


Serve over a handful of croutons

I grew Spaghetti squash 1 yr and decided to try it instead of the pasta in regular pasta salad. But the dressing wasn't right. So then tried it again using Italian in 1 batch and a vinaigrette on 2nd batch. Both were good :)
