1/4 Cup milk
2 Tablespoons vegetable oil
3-6 Inch corn tortillas cut into 1/4 inch strips
1/2 Green bell pepper, seeded and diced
1 Small chopped onion, diced
1 Clove mashed garlic
1 Medium tomato, seeded and diced
3 Ounces grated cheddar
In a bowl, whisk together eggs and milk. In a warm-hot skillet, add oil. Add tortilla strips and crisp. Add onion and peppers and sauté 5 minutes. Add garlic and continue 1 more minute. Add eggs and mix with crispy tortillas and cook till set.
