Mildred's Chicken Casserole
8 chicken breasts, boiled and cubed
1 c. uncooked rice
2 1/2 chicken broth
1/2 cup chopped onion
1/2 cup chopped celery
10 oz. cream of chicken soup
3 T marg.
1 c. sour cream
8 oz. water chestnuts, drained and chopped
1 1/2 cup cheddar cheese
1 roll of Ritz crackers, crushed
salt and pepper to taste
dash of paprika
Saute onions and celery in marg. until tender.
Cook rice in chicken broth. Mix all but Ritz and paprika.
Place in a Pam-sprayed 9 x 13 pan.
Top with Ritz crumbs and paprika
Bake 350 30 to 45 min. Serves 8
