Mini Frozen Strawberry Cheesecakes
12 tablespoons honey graham cracker crumbs
1 envelope unflavored gelatin
1/4 cup cold milk
2 tubs (8 oz. each) light strawberry spreadable cream cheese
2 packets sweet and low sugar substitute
1 teaspoon vanilla
1/2 cup milk
Sprinkle 1 tablespoon graham crumbs in each of 12 large muffin papers and set aside. Add 1 envelope unflavored gelatin to 1/4 cup cold milk. Let soften 5 minutes.
Beat cream cheese with sugar substitute and vanilla.
Beat in gelatin mixture and 1/2 cup milk. Pour into muffin cups. Freeze overnight. Remove muffin papers, invert and serve with sliced strawberries.
