Miniature Cheese Cakes
2 pkgs. (8 oz. each) cream cheese, softened
3 eggs, separated
1 cup sugar
8 ounces sour cream
3 tablespoons sugar
1 teaspoon vanilla
fine graham cracker crumbs
Generously butter miniature muffin tins and sprinkle with graham cracker crumbs, coat well with crumbs
Beat cream cheese, egg yolks, and 1 cup sugar until well blended - fold in beaten egg whites.
Fill tins 3/4 full, bake 15 minutes at 350ºF.
Remove from oven and cool slightly - DO NOT REMOVE FROM PAN -they will fall in middle
Mix sour cream, 3 tablespoons sugar, and vanilla. Put 1/2 teaspoon of above mixture on top of each cake - sprinkle with a few graham cracker crumbs.
Return to oven and bake for an additional 5 minutes.
