Miniature Chocolate-strawberry Cupcakes
3/4 cup plus 2 tbsp. all-purpose
2 tbsp. unsweetened cocoa
1/4 tsp. salt
2 sticks unsalted butter, cut up
4 oz. 70% bittersweet chocolate,
1 1/3 cups sugar
1 teaspoon vanilla extract
36 slices of strawberries
1.Heat oven to 350°F. Line 3
(12-cup)mini muffin pans with paper
liners. Whisk flour, cocoa and salt
in small bowl.
2.Heat butter and bittersweet
chocolate in large heatproof bowl
placed in skillet of almost
simmering water; stir frequently
until chocolate and butter are
melted and quite warm to the touch.
Remove bowl; whisk in sugar and
vanilla. Whisk in eggs one at a
time until blended. Add flour
mixture;whisk just until smooth
3.Spoon about 1 1/2 tablespoons
batter into each muffin cup (batter
will come almost to top of liners).
Bake 15 to 20 minutes or until
toothpick inserted in center comes
out with just a few moist crumbs
attched. Cool on wire rack.
Makes 36 cupcakes
