Mint Chipperoos

INGREDIENTS

  • 2 Cups flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 Cup butter, melted
  • 1 Cup brown sugar
  • 1/2 Cup sugar
  • 1/2 Cup chocolate mint, torn
  • 1 lg egg
  • 2 tsp vanilla
  • chocolate chips (about a cup or however much you like)

DIRECTIONS

Melt butter over low.


set aside.


add mint to 1/2 cup sugar, rub with the back of a spoon until fragrant.


set aside.


Pre-heat 325


Combine flour, soda, and salt, whisk.


Combine butter & sugars, whisk.


add egg, whisk.


add vanilla, whisk.


add dry to wet. mix.


add chips.


bake 8-10 mins.

YUM!!! Though next time I will be looking for chocolate mint leaves, regular mint just wasn't the same, but hubby still is asking for them again. Added 1/3 cup of cocoa for a 1/3 cup of flour, very chocolatey and good, I did have to add a little extra flour back in, but only a little for the right doughiness.
