  • 1/4 cup boiling water
  • 1 cup chopped mint leaves
  • Juice of 6 lemons
  • 1 lemon sliced thin
  • Grated rind of 1 lemon
  • Juice of 6 limes
  • 1 lime sliced thin
  • 1 cup superfine sugar


  • Pour boiling water on the mint leaves. Add lemon & juice, grated lemon rind and lime & juice. Stir in sugar. Let set for 15 mins. Refrigerate in a tightly capped jar.
  • Pour enough of the liquid into a glass to make it 1/4 or 1/3 full; then add ice water, soda or ginger ale. Add the ice. Serve with lemon or lime slice.


This makes a mint syrup, will keep well in the refrigerator for as long as 2 weeks.
