- 1/4 cup boiling water
- 1 cup chopped mint leaves
- Juice of 6 lemons
- 1 lemon sliced thin
- Grated rind of 1 lemon
- Juice of 6 limes
- 1 lime sliced thin
- 1 cup superfine sugar
- Pour boiling water on the mint leaves. Add lemon & juice, grated lemon rind and lime & juice. Stir in sugar. Let set for 15 mins. Refrigerate in a tightly capped jar.
- Pour enough of the liquid into a glass to make it 1/4 or 1/3 full; then add ice water, soda or ginger ale. Add the ice. Serve with lemon or lime slice.
NotesThis makes a mint syrup, will keep well in the refrigerator for as long as 2 weeks.
