Mint Lemon Limeade

Serves 4 | Prep Time 20 min | Cook Time

Ingredients

1/4 cup boiling water
1 cup chopped mint leaves
Juice of 6 lemons
1 lemon sliced thin
Grated rind of 1 lemon
Juice of 6 limes
1 lime sliced thin
1 cup superfine sugar


Pour boiling water on the mint leaves. Add lemon & juice, grated lemon rind and lime & juice. Stir in sugar. Let set for 15 mins. Refrigerate in a tightly capped jar.


Pour enough of the liquid into a glass to make it 1/4 or 1/3 full; then add ice water, soda or ginger ale. Add the ice. Serve with lemon or lime slice.

Notes

This makes a mint syrup, will keep well in the refrigerator for as long as 2 weeks.
