MISS E'S FASOLATHA ( GREEK BEAN SOUP)

Ingredients

  • 1 lb Great North Beans
  • 3 carrots chopped
  • 3 stalks of celery chopped
  • 2 cans of tomato sauce
  • 1 medium onion choppedf
  • 2 cloves of garlic chopped
  • 3/4 cup olive oil

Directions

  • In a large pot add the dry beans and water 2 inches above the beans.Boil beans first for 10 mins. Then change the water, add the same ammount of water back into the pot and boil again . Put all vegetables on top of the Beans and add the 2 cans of tomato sauce. cook until boiling then simmer for one half hour add oil and let it cool. salt and pepper to taste.
