Miss E's Fasolatha ( Greek bean soup)
1 lb Great North Beans
3 carrots chopped
3 stalks of celery chopped
2 cans of tomato sauce
1 medium onion choppedf
2 cloves of garlic chopped
3/4 cup olive oil
In a large pot add the dry beans and water 2 inches above the beans.Boil beans first for 10 mins. Then change the water, add the same ammount of water back into the pot and boil again . Put all vegetables on top of the Beans and add the 2 cans of tomato sauce. cook until boiling then simmer for one half hour add oil and let it cool. salt and pepper to taste.
