Mocha Bread Pudding
2 tablespoons Sugar -- or substitute
2 1/4 cups Milk
1 teaspoon Coffee, instant
2 teaspoons Cocoa Powder
2 slices Bread -- sliced into thirds
5 drops Rum Extract -- optional
Cut the bread into thirds, and layer these fingers in a casserole dish. Beat the eggs and
sugar together. Add the milk, cocoa, coffee, and rum essence and mix well. Pour this
mixture through a strainer over the bread. Bake at 350 degrees F for 30 minutes, until the
custard sets. Allow to stand 5 minutes before serving. This is nice hot or cold.
