MOCHIKO SQUARES

 

  • Cooking Time: 75
  • Servings: 12-15
  • Preparation Time: 10

Ingredients

  • 1/4 c butter
  • 1 cup sugar
  • 1 1/2 t vanilla
  • 1 t baking powder
  • 1 box mochiko
  • 3 eggs, beaten
  • 2 egg whites
  • 3 cups milk

Directions

  • Beat together all of the above ingredients and pour into 9x12 baking dish.
  • Bake at 325 degrees for 75 minutes
  • Let cool completely, cut into squares

Notes

My Auntie Janet makes this dessert, and it is really hard to describe -done right it is light but chewy and can be dangerously addictive!

p.s. you really need to have at the very least a hand mixer for this - don't even attempt to do it by hand unless you can beat like the wind :)
