More Great Recipes: Potato | Vegetable

Mock mashed potatoes

Serves 4-5 | Prep Time 10 minutes | Cook Time 30 minutes


2 quortes water
5 mini red potatoes (not peeled)
1 head cauliflower
1 large onion
3 T canola oil
Kosher salt to taste
Pepper to taste

Pour water into a large pot and bring to a boil. Ad in the potatoes and cauliflower. Cook for 25-30 minutes. While the potatoes and couliflower are boiling, take a small frying pan and hear it up with the oil. Dice the onions into small cubes and add to the pan when hot. Let the onions cook until golden brown (about 6 minutes) and turn off the flame. When the potatoes and couliflower is done, drain and put back in the pot. Mash both and then add in the onions, salt and pepper. Serve hot!

As we all know mashed potatoes are delicious, but are very high in starch. I created this version of mashed potatoes that taste even better then the real deal, so I wanted to share it for all the moms who can't get their kid to eat those very important veggies!
