MODIFIED RICK BAYLESS TOMATILLO SALSA

 

  • Cooking Time: 15 minutes
  • Servings: 4-6
  • Preparation Time: 15 minutes

Ingredients

  • 1 can tomatillos, drained
  • 2 cloves garlic, peeled
  • 1-3 chipotle peppers in adobo sauce
  • salt to taste

Directions

  • line a 12" skillet with aluminum foil and spray with cooking spray and heat on medium high. Add the tomatillos and garlic cloves. Pan roast until darkened in color. Add to a blender and cool. Add the peppers and salt to taste. Transfer to bowl, chill, and serve with chips!

Notes

Rick Bayless uses fresh tomatillos in this awesome salsa. But, sometimes, I just can't make it to the store to buy fresh, so I always keep some canned tomatillos in the pantry.
