Modified Rick Bayless Tomatillo Salsa
1 can tomatillos, drained
2 cloves garlic, peeled
1-3 chipotle peppers in adobo sauce
salt to taste
line a 12" skillet with aluminum foil and spray with cooking spray and heat on medium high. Add the tomatillos and garlic cloves. Pan roast until darkened in color. Add to a blender and cool. Add the peppers and salt to taste. Transfer to bowl, chill, and serve with chips!
Pairs Well With
Rick Bayless uses fresh tomatillos in this awesome salsa. But, sometimes, I just can't make it to the store to buy fresh, so I always keep some canned tomatillos in the pantry.
