- 1 can tomatillos, drained
- 2 cloves garlic, peeled
- 1-3 chipotle peppers in adobo sauce
- salt to taste
- line a 12" skillet with aluminum foil and spray with cooking spray and heat on medium high. Add the tomatillos and garlic cloves. Pan roast until darkened in color. Add to a blender and cool. Add the peppers and salt to taste. Transfer to bowl, chill, and serve with chips!
NotesRick Bayless uses fresh tomatillos in this awesome salsa. But, sometimes, I just can't make it to the store to buy fresh, so I always keep some canned tomatillos in the pantry.
