Moist Zucchini Drop Cookies

Serves 36 | Prep Time | Cook Time

Ingredients

1 cup grated zucchini
1 teaspoon soda
1 cup sugar
1/2 cup shortening or butter
1 egg, beaten
2 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon salt
1 cup chopped nuts
1 cup raisins


Mix together zucchini, soda, sugar, shortening, and egg.


Sift together flour, cinnamon, cloves, and salt.


Stir sifted ingredients into zucchini mixture.


When almost blended, stir in nuts and raisins.


Drop by teaspoons on greased cookie sheet.


Bake in pre-heated 375-degree oven for 12 to 15 minutes.


Makes about 3 dozen.
