INGREDIENTS

  • Servings: 12
  • 1C wheat bran
  • 1 1/2C whole wheat flour
  • 1 1/4 C buttermilk
  • 1/2 C Molasses (honey works and gives a milder flavor)
  • 1/2tsp salt
  • 1/2tsp baking powder
  • 1tsp baking soda
  • 1/8C vegetable oil
  • 1 egg white
  • 1/2C dried cherries/bluberries (your choice really)
  • 2T of coordinating Smuckers sugar free preserves (the cherry and blueberry are great!)
  • Muffin liners
  • Butter spray

DIRECTIONS

Preheat oven to 375. Line a pan for either 12 regular size muffins or 24 mini muffins and spray the liner with butter flavored cooking spray.


Sift or stir all of the dry ingredients together, including dried fruit.


Combine the wet ingredients and mix well being sure to break up the fruit spread as it will be sort of chunky. Combine the wet and dry until just moist. Drop heaping tablespoonfuls into the mini pans, they will be overflowing or scoop into the regular size tins, they should be rather full too. Bake for about 18min or until a knife inserted comes out clean.


These are amazing! The first time I made them they were sort of small and very moist, almost too moist. So I decided to incread the flour and bran and the second batch was great. The top becomes sort of crunchy and they were still very moist. The molasses is very distinctive and if you dont love it dont use it. The honey is a great substitute and is nice and mellow. Also you could substitute sugar free applesauce instead of the preserves, I just had them on hand in the coordinating flavor and it turned out great that way.

Ive been trying to incorporate more fiber into my life, and while pre-packaged fiber bars are great once in a while I dont want to eat them everyday! So I began a search for recipes using wheat bran and found this one on cooks.com and then modified it.
