Molasses Oat Cookies
1/2 cup shortening
1 1/4 cup sugar
1/2 cup molasses
1 3/4 cups flour
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups quick-cooking oats, uncooked
1 cup golden raisins
Optional: 1/2 cup chopped nuts
Combine the shortening, eggs, sugar, and molasses in a medium bowl.
Stir in the flour, baking soda, salt, and cinnamon.
Add the oats, raisins. and the nuts, if you are using them.
Drop by teaspoonfuls onto lightly greased baking sheets
Bake at 400 F for 8 to 10
