MOM'S FAVORITE LEMON CAKE

Ingredients

  • CAKE BATTER:
  • 1 box lemon cake mix
  • 1 pkg. lemon instant pudding
  • 3/4 c. water
  • 3/4 c. canola oil
  • 4 eggs
  • SAUCE/GLAZE:
  • 3 c. powdered sugar
  • 1/2 c. lemon juice
  • 1/2 c. hot water
  • 3 T. butter

Directions

  • Preheat oven to 350 degrees. Mix all cake ingredients together and pour into a 9"x13" pan (do not follow the directions on the cake mix box). Bake for 25 minutes. While cake is baking, mix all the sauce ingredients together and set aside; as soon as the cake comes out of the oven, poke holes all over the top of the cake and pour on the sauce/glaze. This cake can be eaten hot or cold but you'll need to wait a few minutes to allow the sauce to soak into the cake... The waiting is not as easy as you think... Just wait until you smell this cake!!!

When reading one of my old cookbooks I ran across this recipe. I didn't think it could possibly be good being it is soooooo easy to prepare... My brother was here from Florida and when he and my mom tasted the cake, they fell in love with it.. Now my bubba has given the recipe to several other people that begged him for it after his return home. I still make this cake for my mom and yes, it really is delicious even though it is the easiest cake you'll ever make... No mixer required.... just good 'ol elbow grease!!!
