Mom's Favorite Lemon Frosted Cookies
3/4 cup (1 1/2 sticks) unsalted butter, at room temp.
3/4 cup granulated sugar
2 large egg yolks
1/2 teaspoon vanilla extract
1/4 teaspoon kosher salt
2 cups all-purpose flour
For frosting: --------
1 cup confectioners’ sugar
2 tablespoons fresh lemon juice (more if necessary)
1 teaspoon grated lemon zest (zest your lemon before you juice it)
1 pastry brush
assorted cookie cutters
extra flour for rolling pin and dough (while rolling it out onto a surface)
With an electric mixer, beat the butter and granulated sugar until fluffy. Add the egg yolks, vanilla, and salt and beat to combine. Gradually add the flour, mixing until just incorporated. Refrigerate for 30 minutes.
Heat oven to 350 degrees. Take dough out of the fridge and make into shapes. Place on a greased cookie sheet. Bake until lightly golden, 16-20 minutes. Let cool on the baking sheets for 5 minutes, then transfer to cooling racks to cool completely.
In a small bowl, whisk together the confectioners’ sugar, lemon juice, and zest until it forms a thick but pourable glaze (add more lemon juice if necessary). Dip or paint glaze using pastry brush on cookie. Put on cookie sheet or cooling rack or another flat surface so the glaze can harden.
Pairs Well With
This is a great butter cookie base and the lemon frosting is very simple to make and tastes great. It's also fun to cut them into different shapes for different occasions. They are definitely a crowd pleaser!
