MOM'S LATKES (POTATO PANCAKES)
Mom's Latkes (potato pancakes)
INGREDIENTS
- 2 eggs
- 3 cups grated, drained potatoes
- 4 Tbs grated onion
- 1 tsp salt
- 1/4 tsp pepper
- 2 tbs cracker or matzo meal
- 1/2 cup fat or butter
DIRECTIONS
Beat the eggs and add the potatoes, onion, salt, pepper, and meal.
Heat half the butter in a frying pan and drop the potato mixture into it by tablespoon.
Fry until browned on both sides.
Keep latkes hot until all are fried and add more butter as required.

Our family loves potato pancakes but they are so time consuming to make! I've found a trick that cuts the mess and prep time and also keeps the potatoes from turning brown....the shredded fresh potaoes that are in the Dairy Case (near the eggs). I think they're called Simply Potatoes. I had a bag I was going to make hash browns out of (for breakfast) and suddenly had an Ah Ha! moment and made them into pancakes instead. They really worked great and another plus, they don't have to be wrung out.
