MOM'S LEMON PIE

Ingredients

  • 1/3 cup flour
  • 1/8 tsp salt
  • 1/4 cup lem,on juice
  • grated rind of lemon
  • 1 Tblsp butter
  • 2 egg yolks, beaten
  • 1 cup sugar

Directions

  • Mix dry ingredients; add hot water gradually - stir constantly and cook until thick, then cook 5 minutes longer. Add butter, juice and rind. Cool slightly. Add to egg yolks, cook 2 minutes longer. Cool, pour in baked crust

Notes

When Mom's eyesight was failing I typed this recipe on the computer in large print, and she made the pie for a neighbor. I forgot to include one ingredient - SUGAR! Ooops.
