MOM'S MEYER LEMON SQUARES

Ingredients

  • 1/2 c powdered sugar
  • 1/4 t salt
  • 2 c flour
  • 1 c butter
  • 3/4 c sugar
  • 1 t baking powder
  • 1/4 t salt
  • 4 eggs, slightly beaten
  • 4 T meyer lemon juice
  • 2 T dried lemon peel
  • glaze
  • 2 T meyer lemon juice
  • 1/2 c powdered sugar
  • 2 T butter

Directions

  • With pastry cutter, mix together 1/2 c powdered sugar, salt, flour, and butter
  • press mixture into a 9x12 pan
  • Bake for 15 minutes at 350 degrees
  • Mix together sugar, baking powder, salt, eggs, 4 T lemon juice and lemon peel
  • Pour mixture into baked crust and bake for another 20 minutes at 350 degrees.
  • Let cool
  • Prepare glaze by blending lemon juice, powdered sugar and butter over low heat in saucepan until butter is just melted, then pour over pan.
  • Let glaze set completely, then cut into squares

Notes

These are some of the best lemon squares I have ever had - so I changed very little about them
