- Cooking Time:
- Preparation Time:
- leftover mashed potatoes, cold
- 2 large eggs
- salt and pepper to taste
- 1/2 cup finely diced onion
- 1/4 cup flour, more for dusting
- canola oil
- Stir together the mashed potatoes, eggs, onion, salt, pepper, and 1/4 cup flour. Form into patties and dredge in flour, patting off the excess. Fry patties in a preheated pan over medium-high heat for about 6 minutes, flipping every couple minutes. Serve topped with ketchup.
NotesI never tire of this childhood favorite. Crispy on the outside and soft and creamy on the inside with just a hint of onion, these are terrific with eggs for breakfast or as a side dish at dinner.
