INGREDIENTS

  • leftover mashed potatoes, cold
  • 2 large eggs
  • salt and pepper to taste
  • 1/2 cup finely diced onion
  • 1/4 cup flour, more for dusting
  • canola oil

DIRECTIONS

Stir together the mashed potatoes, eggs, onion, salt, pepper, and 1/4 cup flour. Form into patties and dredge in flour, patting off the excess. Fry patties in a preheated pan over medium-high heat for about 6 minutes, flipping every couple minutes. Serve topped with ketchup.
